The Declaration of Independence from Spain was signed on September 15th 1821. It was a meeting of nobles formed by members of the audience, city hall, church officials, the university, trade consulate, law school and other personalities. And from this date, Guatemala have been celebrating, year by year, the famous “Feria de independencia” or “independence fair”. This celebration is all over the country, Central America and Mexico but in Guatemala and Especially in Quetzaltenango (Xela) The fair is biggest that the rest of the country and Central America countries.
Xela is famous for all the activities like festivals of music on the street, marimba, parades of bands, civic events and much more parties in Xela and in different cities!
The street food is another present from this days.

- Elotes Locos (the translation to this name is like “The crazy corn”
- Roscas; it is a kind of bread but no sweet.
- Ponche, this is hot drink made by fruits and liquor
- Tacos
- Garnachas
- Algodones; this is made of sugar. It is delicious!
